Beverage Management Center

The Southern Wine and Spirits Management Center at Florida International University is the most advanced beverage appreciation and evaluation facility in the world. It supports a first-class approach to educating the individual in both the science of tasting and analysis and the business of beverage management.

The envy of the industry and hospitality schools throughout the world, this Center is the ultimate laboratory for analyzing, testing and experiencing the finest wines, spirits, beers and other beverages.
Funded by Southern Wine and Spirits of America, Inc., the leading national beverage distributor, this addition to FIU's School of Hospitality Management represents the creating of the first forum dedicated to the promotion of serious beverage study and analysis --a true usage for the art of appreciation.

Created for a variety of users, the state-of-the-art Center is equipped wit the latest technology needed to accommodate students, wine-society members, industry professionals such as wine makers and distillers, and members of the community. It is capable of supporting product evaluation, industry research and teaching.

The center's location on FIU's beautiful Biscayne Bay Campus in Miami, an international tourism and commerce hub, makes it a popular, accessible venue for countless events.
FIU's  Southern Wine and Spirits Beverage Management Center is a 4,500 square-foot facility that offers the latest technology for beverage and analysis. 

The WINE CELLAR is secured and temperature-controlled to maintain the ideal environment for preserving the School's wine collection. With a capacity for 2,000 bottles, the cellar is not only functional and attractive, but it is also a true showcase of exquisite and unique wines.

The WINE AND SPIRITS TASTING LABORATORY takes the art of appreciation and the science of tasting to a new level. The lab offers the ideal space in which to taste and market test beverages. The multi-tiered room accommodates 41 participants at individual stations, each equipped with plumbed sinks. The addition of an advanced sensory-evaluation system will transform the lab into a high-tech testing ground where participants will be able to answer questions about a beverage's color, smell, and taste by selecting the appropriate choice on electronic keyboards at each station. Answers will be immediately tabulated and recorded and made available on the master console at the front of the room. The room is acoustically balanced and has an independent air-handling unit to eliminate sensory interference and promote concentration among wine and spirits tasters. Incandescent lighting provides the ideal setting for the objective viewing of wines and spirits and makes color-masking tests possible.

The Herbert S. Joseph Lecture Hall is a 76-seat classroom that features a state-of-the-art overhead projection system, a winepress display, a map display, and a modular demonstration area. Just as the tasting lab acoustics, lighting, and other refinements enhance the tasting experience.

Located on FIU's Biscayne Bay Campus, the SCHOOL OF HOSPITALITY MANAGEMENT enrolls approximately 900 students from throughout the United States and 18 countries.  The school offers a Bachelor of Science in Hospitality Management with specialties in beverage management and travel and tourism management, a Master of Science in Hotel and Foodservice Management, and three certificate programs. Three dozen full-time faculty members with extensive industry experience, augmented by practicing industry executives, have guided the school to national recognition, placing it among the very top hospitality schools in the country and earning it a near 100 percent job-placement rate for recent graduates.
Enhancing the quality of education at the School, the university has established the first and only eminent scholar chair in the country devoted to beverage management. Named for the chairman and CEO of Southern Wine and Spirits of America, Inc., the Harvey R. Chaplin Eminent Scholar Chair will support both teaching and research initiatives and draw attention to the School's continuing partnership with leading members of the industry. The holder of the chair heads FIU's Beverage Management Studies program and oversees the operation of the Southern Wine and Spirits Beverage Management Center.

Outstanding academic programming at FIU reinforces excellence in the School of Hospitality Management. South Florida's largest doctoral granting institution, FIU enrolls more than 30,000 students  on two campuses.
