BARBADIAN RECIPES
Pepper Pot
2 pounds fresh pork 2 medium onions, chopped
2 pounds fresh beef bunch thyme
1/2 pound salted pig tail 4 red peppers
or snout 6 whole cloves
1/2 pound salt beef 3 teaspoons brown sugar
1 oxtail 1/4 cup casareep*
1 duck
1 chicken
Wash and cut meat into large pieces, put in a large pot, cover
with cold water and salt to taste. Bring to the boil and
then simmer until nearly cooked. Add onions, thyme, peppers,
cloves, sugar and casareep. Simmer until meat is quite tender
and falls off the bone. Serve very hot.
*Most Barbadians are of the opinion that no Pepper-Pot is
really a Pepper-Pot without the addition of casareep.
Casareep is a thick black syrup which is made from cassava.
It gives the pepper-pot its color as well as its thickening.
