BARBADIAN RECIPES
Rice and Peas
1/2 pint dried peas, washed 1 medium onion, chopped
1/2 pint rice, washed 2 tablespoons oil, butter
2 pints water or margarine
Salt
Pepper
Cover peas with water, add salt and pepper and bring to the boil.
Reduce heat and simmer for approximately 45 minutes. Add rice,
onion and oil, stir well. Cover and simmer until the water is
absorbed or grains are soft and fluffy--approximately 20 minutes.
Serve hot.
*Rice is a staple of the Barbadian diet and almost every Barbadian
meal includes rice. Indeed many Barbadians are of the opinion
that a meal without a rice dish is incomplete.
